I'm not gonna lie, it IS pretty ridiculous. But, well, the very beginning of a relationship or potential relationship is a pretty ridiculous time.

But… but… are you dead to emotions? The first time your elbows touch when you're sitting next to each other and don't immediately move away, but rather stay and linger don't you get butterflies? Are you not human?
Seriously, it's the little things like that that made dating worth it and fun.

The fact that you participated in in says that you have some emotion. At least, assuming that you enjoyed it. (Well, and that's assuming that you like the boy.)

I think I enjoyed it? And I think I like him? I dunno, I've had some pretty crappy dating experiences in the past year that make it hard for me to figure this out.

Honestly, to my knowledge I have never participated in "elbow stacking." So, I guess I can't really say if I'm dead to emotions as far as that. However, I can imagine that the emotion, as described by someone more knowing (such as yourself apparently) would be a good thing. ;D
I just find the nomenclature a little ridiculous. As well as the fact that it was widely enough noticed to have gained a name. Imagining the night when it came to be actually makes me smile a little bit. It goes something like this, at least in my head.
"So! What happened?"
"Well, we were watching this movie, right. Up. Anyway, you know that one scene?"
"Yeah!"
"Well, so, we were kind sitting next to each other when that thing I noticed that, well, our arms were touching!"
"Touching? Touching how?"
"You know. My arm was kind of sitting on his. What's that called?"
"Um. Elbow stacking, I think. But, whatever, what happened!?"
Yeah. Smiles. ;D

I agree at the level of ridiculousness involved in said elbow stacking.

I KNOW. I hate those "are you a human or computer" tests that are practically impossible to get right the first time. ESPECIALLY when it's for something like "sign up for our newsletter so we can sell your e-mail address!" things.
