Can't Think of the Word!

I am writing an email and I am struggling to think of a word. My brain has the sense that the word means to carefully cut away from a larger whole. It conjures up an image of a doctor using a scalpel to cut something away.
Any suggestions?

Excise! Thats it. My mind was blocking it.
Resecet sounds like a fun one though. I am going to try to use that in writing at some point
