gmail chat settings

Didn't there used to be a way to hide people in gmail chat? Not block them, just make it so they don't show up by default? I know I've done that with people before, but now I can't find the setting . . .

If you go to "Video and More," there's an option to "Never Show" the contact. That's how I always do it!
