If I make instant pudding with something besides milk, will it still set properly? Coconut milk, for example?

I have made instant pudding with coconut milk, almond milk, and rice milk, and they all worked fine.

That sounds delicious! I love me some coconut. Maybe someday I'll have to try homemade pudding with coconut milk. … or just put coconut in a vanilla pudding.
