That was last night. Yellow went out of town for a week so I didn't want to spend my last evening with him cooking. Tonight is Cafe Rio that my brother and his friends are picking up and bringing over here. Though, I did have a rather late lunch of a Spanish flatbread with zucchini, yellow squash, tomatoes and olives with garlic olive oil. Dang! This has been duly noted. And I may start buying Papa Johns more often. We typically get Papa Murphy's cuz it's cheaper, but that would definitely make Papa Johns cheaper. (Unless, of course, this is only a once in awhile kind of deal. Which I could still totally get behind.) And let's be honest. Today I made rice and lentil curry. I wasn't terribly impressed with my lentil curry, though. Maybe I should actually try using a recipe next time?

Whenever I try to make curry, it never tastes as good as my mom's curry and it's very annoying because I use her recipe. pineapple and mango salsa and strawberry soup. Which is even better if it's been chilled with mint leaves and consumed with berries.

Also, because I wanted cream cheese, we had to go and buy a 4th package of cream cheese today. My mom will not let there be less than three packages of cream cheese in the fridge in case she gets a sudden urge to make a cheesecake. You might think that means she makes cheesecakes all the time, but in reality, she makes one about once every 2 years, and usually only if it's Easter, Thanksgiving, or Christmas. But apparently she just always needs to have the option available.

Last night we had what I'd like to call "dressed up barbecue chicken." Chicken with spices (chili powder, Italian seasoning, probably some "chicken seasoning", worcestershire sauce probably, etc), then after mostly done barbecue sauce, then a few more minutes with bacon slices and cheese melted on top. I put tomatoes and green onions on afterward; my sister put a slice of grilled pineapple on. We also had (real!) mashed potatoes. It was sooooo yummy.
Tonight we had hot dogs. Woohoo patriotism.

The only dinner of note this week was a parmesan, spinach, and prosciutto risotto that I made a few days ago, which was delicious. I also used the leftover prosciutto to try to make that leek pasta dish mentioned earlier in this thread, but I think I did it wrong. The sum of its parts was greater than the whole.

NerdGirl, do you have any favorite lentil recipes to share? I've had lentils prepared in ways that I like, but when I try to do them myself they tend to come out pretty dull.
Dragon Lady, can I have your recipe, too? I generally eat vegetarian, but I might do that sometime when I'm hosting meat-eaters.

My own basic lentil soup recipe is just lentils, some chopped celery, and a lot of chopped onion. You can sautee the onion in a bit of olive oil or butter if you want to first, or you can just throw it all in the pot with some vegetable, beef, or chicken broth, and salt and pepper. The key is to have a lot of onion in it (assuming you like onion). If you want to be fancy you can also put carrots and potatoes and some kind sausage/bacon/ham in it.
And a couple of times I have made a butternut squash-lentil thing that's pretty good. You could use another kind of squash, but I invented it when I was trying to use up a bag of frozen butternut squash that was in the freezer. Basically you boil the squash until it's soft, then you puree it. Then you put the pot of pureed squash back on the stove and add sauteed onions and garlic, a bit of vinegar (white wine or balsamic vinegar are the ones I've used), and you can melt a little bit of cream cheese into it if you like dairy, or a bit of coconut cream if you like coconut. And salt and pepper. This is all pretty inexact, so taste it as you go along. And then you mix the squash with either just plain cooked lentils, or lentils and quinoa, or lentils and rice. I'm re-starting my food blog, and I'm going to try and figure out a more specific recipe for this one, but that might not happen for a while.
