Vegetarian quesadillas: Lightly coat tortillas with oil, then stuff with mashed black beans, cilantro, grated zucchini, and cheese (we used mozzarella because that's what we had on hand, but I think it would have been better with jack). Broil 3-5 minutes on each side and serve with salsa.

My specialty salad: romaine lettuce with tomatoes, red onions, medium cheddar cheese, avocado and poppy seed dressing. I was out of bacon pieces otherwise those would have gone in too.

I was on kitchen duty at my friend's reception, so way too many pilfered mini-sandwiches and watermelon chunks.

Sour dough with olive oil and balsamic vinegar, artichokes with lemon butter, and fresh peaches. Mmmmm! :D

And we ate on the floor, which made it even better.

Marduk made orange chicken last night. Improvised, though, because we didn't have soy sauce or rice vinegar (though he found a sauce where they were the first two ingredients and used that). And then it came out too sweet due to some last-minute honey. Still good though. And I made him make green beans with mushrooms so we had a vegetable.
The Epistler was quite honestly knocked on her ethereal behind by the sheer logic of this.

Tonight we're having couscous with almonds, raisins, lemon juice, and yellow squash; homemade rolls with fresh rosemary; and cheesecake with a choice of chocolate-rum sauce or raspberry-rum sauce. (Sometimes my meal ideas go a bit overboard when we're having company...)

1. "COOS-coos." Like how a baby coos, but twice.
2. Couscous is wheat flour shaped into little round pellets. You cook and serve it quite a bit like rice.

Wait, do you pronounce it with a final "z" sound? I've always said it with a final "s" sound.
